Creamy Sesame Cucumber Salad

I was super inspired by Logan on TikTok because I agree, sometimes you do just need to eat 4 baby cucumbers. He’s got some great combos going, but I made up my own and was very happy with the results.

Step 1: slice a bunch of Persian cucumbers with a mandolin. To this bowl of green, I added chopped broccoli that I steamed in the microwave for about a minute less than the bag directed. This isn’t necessary – I think this salad would be great as a crunchy crunchy cuke sitch, but I had the broc and needed to use it. Toss with a bunch of creamy sesame dressing (I get the golden creamy dressing from H Mart and am obsessed), kewpie mayo, furikake, and chili crisp.

If you ever wondered how anybody could eat a boatload of cucumbers in a single sitting, this is how. Honestly, it’s really just a vehicle for me to consume this salad dressing. This is a no measurement dish – sorryyyy.
